: Eggplant Parm

With the abundance of eggplant, it was time to make some parm!

Cut into 1/2" slices and deskinned. 
-Flour
-Egg bath
-Italian Bread Crumbs

Fry in pan until both sides are golden brown.

Put a layer of homemade tomato sauce on the bottom followed by sauce and cheese and start to layer.

Sauce, cheese, and a third layer!

Put in the oven at 420 degrees for 30 minutes and voila!  Bt far the best eggplant parm I've ever made and maybe eaten!

She doesn't like to give me any props since she gets disgusted when her friends tell her how lucky she is.  lol
